In a mixing bowl, beat the eggs and add the shrimp. In a separate mixing bowl, combine the cornmeal, flour, and dry seasoning. Add the shrimp and coat them evenly. Add the shrimp to the oil and fry until golden brown, 3 to 5 minutes. Remove and drain on paper towels. Sprinkle lightly with salt.

Season the eggplant pirogues with 2 teaspoons of the Essence. Working 1 at a time, dredge the eggplant pirogues in the seasoned flour, shaking off excess, then in the egg wash, and finally in the seasoned bread crumbs. Welcome to Party Pirogues! Pirogue (pee-row) - an important symbol of Cajun heritage. Originally made out of a single cypress log, Acadian people used these boats to navigate the shallow swamps and marshes surrounding Louisiana.
