Purple Sauerkraut. Ingredient. 500g of shredded purple cabbage. 25g of cooking salt. 1/2 cup currants. 4 bay leaves. Method. Throw the shredded cabbage into a large plastic container. Mix the cooking salt through the cabbage. With the end of a rolling pin, start to mash the cabbage together. The juice should start to leak out of the cabbage.

Using clean hands, massage the cabbage for about 5 minutes until it is tender and juicy and the salt is dissolved. Use a sauerkraut pounder or a wooden spoon to make this task easier. Allow the cabbage to sit for 30-60 minutes to release more juice. Continue to massage the cabbage for another 5-10 minutes.

Add 1 and a half tablespoons of salt to the cabbage. The salt is going to begin pulling water from the cabbage and will create the brine that the sauerkraut ferments in. Directions: peel off outer cabbage leaves, then cut heads into quarters. Remove the core or it may give the ferment a bitter taste. Cut each quart into 1/4 slices, then cut slices into 2-3 inch lengths. Place half in a crock or bucket. Sprinkle with half the salt, then add the remaining cabbage. Add the remaining salt.

Method to Make Purple Cabbage Sauerkraut Recipe. Start by shredding the cabbage into thin pieces. Do this by continuing to slice around the edge of the cabbage head. Then place the cabbage shreds in to a large bowl. Mix with the salt and garlic powder. Take your airtight glass jar or mason jar and add the cabbage into the jar.
