Steps to Make It. Gather the ingredients. Place dragon fruit in a food processor or blender. Add water (only if the fruit isn't ripe and juicy), lemon juice, and sugar, if needed. Sometimes the fruit is sweet enough so the sugar is not necessary. Purée until smooth. Taste the mixture and add more sugar, if needed.

Add all ingredients to a high speed blender or food processor bowl, and process until soft serve ice cream consistency. For a thicker ice cream, add to a shallow dish, cover, and freeze for 2-3 hours. If freezing overnight, you will need to reprocess it in the morning to make it soft serve consistency again.

Juice the lime and orange. Slice the dragon fruit and use a spoon to remove the flesh from the outside. Add ingredients to a blender or food processor. Blend until smooth. Place into a 1.5 quart ice cream container. Freeze for 2 hours+. Remove from freezer to thaw out 10 minutes before scooping.
