Instructions. Follow boxed cake mix directions, substituting equal parts sparking wine in place of water. To make peach whipped cream: Whip chilled heavy cream with 2 Tbsp granulated sugar and 2 Tbsp peach jam. To assemble: Spread remaining peach jam between cake layers. Frost with peach whipped cream.

Measure out 2 ounces of peach puree or nectar. Pour the peach puree into a champagne flute. Chilling the glasses first is an added bonus, but not necessary. Now simply top off the glass. Slowly pour the Prosecco in until the glass is full. Give the mixture a gently stir and garnish the glass with a peach wedge.

To get started with this recipe, you'll need a blender ready to go. You will also want a bag of frozen peaches. To begin, add a cup of frozen peach slices into your blender along with 1/2 cup of water. Blend it until it's smooth. Then add the peach schnapps and puree to each glass (see recipe card for amounts) and top with Prosecco.

The Peach Bellini is a delicious and light summer-y cocktail, traditionally consisting of champagne or sparkling wine and peach puree. I have yet to try a champagne that I like, so a Peach sparkling wine and fresh raspberries inspired this cocktail-cake number!

Preheat oven to 350 °F. Spray three 6-inch round cake pans or two 8-inch round cake pans with non-stick spray, line the bottom of each pan with parchment paper and spray again. Set aside. In a medium-size bowl, whisk and stir together the all-purpose flour, cornstarch, baking powder, and salt. Set aside.

Line the bottoms of the pans with baking paper and grease the sides. Preheat the oven to 180C. In a large bowl whisk together all the dry ingredients. In a separate bowl whisk together the wet. Pour the wet into the dry and whisk until combined and no lumps remain.

Instructions. Place the eggs in a blender and beat for 5 minutes until light and fluffy. Add the sugar and beat for another 5 minutes. Meanwhile, mix the flour, baking powder and salt. Gradually add this mixture to the egg and sugar mixture while beating and continue to beat for 5 minutes.

Add peach bellini and mix on low until a smooth batter forms (1-2 minutes). Pour batter into a greased tube or bundt pan and bake at 325 degrees for approximately 90-100 minutes, or until a toothpick inserted into center of cake comes out clean. Meanwhile, combine the powdered sugar and peach bellini and stir until smooth.

In a high-speed blender, combine the peach slices, brandy, lemon, and honey. Blend until smooth. The puree will be quite thick, so stop and stir as needed. If it's still too thick, add additional brandy 2 tablespoons at a time until you have a smooth puree.
