I decided to try to create a risotto dish using primarily local ingredients. I love it when experiments turn out this well. The light cooking of the rice in aromatic spiked olive oil, followed by the white wine left a solid foundation in each individual grain which shone through brilliantly in the final dish.

Preparation. In a large pot, combine the rice, stock, and bay leaves and bring to a boil over medium-high heat. Cover and reduce the heat to the lowest setting. In a large sauté skillet, melt butter over medium-high heat. Add sausage and cook until lightly browned. Add both boxes of Tony's Creole Dirty Rice Dinner Mix and toss until coated with butter. Cook rice for 2-3 minutes until lightly toasted, stirring often. One cup at a time, add in chicken stock and cream mix to rice and cook stirring.

Heat the olive oil and butter in a large, heavy sauce pan. Remove the sweet Italian sausage from the casings and add to the pan, breaking it up into smallish chunks.
