Soak mushrooms the night before in the large soup pot. Make sure that you emerge them all in the water. Wash all vegetables. Cut all vegetables into small pieces. Cover dried ceps with water in a medium pot (3l) and soak them for at least 3 hours or overnight. Add the broth to pot. Cook for 15 minutes. Cook pasta in the separate pot al dente. Remove the cooked mushrooms from the water with a skimmer spoon and cut them into small pieces. Put them back in the pot. Add cooked pasta and cream.

Add water and cans of sauerkraut juice, bring to boil, lower heat and simmer 1/2 hour. In a small sauce pan brown remaining 1/4 cup butter, adding flour to make a roux. When the mixture is even and homogenous, add it to the pot, stirring into the soup with the whisk. When the soup starts simmering again, cook for another 5-10 minutes and taste.
